The long hot summer was so welcome  and, even though, it has come to an end, we can still enjoy the good memories of fun times spent with family and friends.  Each day was enjoyed, at a relaxed pace, with blue skies and constant sunshine. Plans were made for many ‘Gatherings’ and the days of balmy sunshine were most appreciated. And I have been ‘gathering’, during the summer months, in France  and can now introduce you to my new website’ frintagehome’….

 

But change is, as is said, always good and so, we can look forward to what has yet to come….As Nature’s colours change to a warmer, richer swathe, we can enjoy  Autumnal walks wrapped up, protected from the cold, crunching leaves underfoot…returning home to  cosy evenings indoors in front of  log fires…comforting food, gathering old  friends and new  around the dinner table…

 

One of my favourite Autumnal recipes is a Mary Berry Apple Cake…it is so yummy…

225g self raising flour, 1 level teaspoon of Baking Powder, 225g caster sugar (I use Light Muscavado, as I feel it gives the cake a deeper flavour), 2 Eggs, ½ Teaspoon Almond Extract,150g Melted Butter, 350g cooking apples peeled, cored and thickly sliced, 25g Flaked almonds

Measure the flour, baking powder, sugar, eggs, almond extract and melted butter into a bowl. Mix and beat well to combine the ingredients. Spread half of the mixture into the tin (20cm Loose-Bottomed lightly greased). Spread the sli ced apples on top and cover with the remaining mixture. This may be somewhat awkward, so use 2 dessertspoons, as it will make the task easier. Sprinkle with the almonds and cook in a preheated oven 160C/325F/Gas Mark 3 for 1 ½ hours until shrinking away from the sides of the tin.

Serve warm, dusted with icing sugar, with a dollop of crème fraiche. Delicious!!
